They do the same job — cover other sounds with a steady one — but they feel nothing alike. White noise is a bright hiss; brown noise is a deep rumble. Most people strongly prefer one. Here is what separates them, where each fits, and how to settle it for yourself in one evening.
White noise has equal energy at every frequency, so the high frequencies dominate what you hear: a hiss. Brown noise drops 6 decibels per octave as pitch rises, so almost all its energy sits in the lows: a rumble. Pink noise sits between the two.
Neither is better in any proven way. Both mask sound. White noise covers high-pitched sounds slightly more effectively; brown noise is easier to tolerate for hours. Preference, not performance, should decide. Individual results vary significantly.
Every noise colour is random sound. The colour names describe how the energy is spread across frequencies. White is flat: as much energy at 10,000 Hz as at 100 Hz. Because the ear is more sensitive to high pitches, flat sounds bright. Brown tilts hard towards the low end, losing 6 decibels every octave, so by the time you reach the frequencies that sound sharp there is almost nothing left.
That tilt is the entire difference. It changes how the sound feels, how long you can tolerate it, and — slightly — which external sounds it hides best.

Most of the sleep and attention studies used white noise, because it is the easiest to generate and describe. A smaller body of work used pink noise timed to brain rhythms. Almost none used brown noise as a separate condition. So when an article says "studies show brown noise helps", it is usually borrowing from white or pink noise studies.
In a laboratory study, adults fell asleep faster with continuous white noise in a noisy environment; the authors attributed the effect to masking rather than to any property of the noise itself.

The preference effect — how long you can stand it — is where the colours differ, and that is a personal question.
Set a comfortable, clearly quiet volume with white noise first. Switch to brown without changing the volume setting. Notice which one you stop noticing sooner.
Open a window, run a tap, have someone talk in the next room. Which one makes the intrusion less sharp? That is the one for your environment.
The sound you barely notice at five minutes can grate at thirty. Brown usually wins this test; sometimes pink does. Rarely white.
Use the winner for three nights before switching. The routine effect needs a few nights to show.
Turning brown noise up because it sounds quieter than white noise at the same setting. It is not quieter in energy — it is quieter in the frequencies your ear is most sensitive to. Set the level by how well it softens the room, not by how loud it feels.
At comfortable levels, either colour is generally considered safe for long listening. Individual results vary significantly; stop if you notice ear discomfort.
